許多研究顯示醣類攝取與癌症發生之間存在關聯性。高醣類攝取的飲食模式,特別是食用高GI(Glycemic index,升糖指數)的食物,會增加胰島素和胰島素樣生長因子(IGF)的分泌,進而提高癌症的風險。此外,醣類攝取量還與慢性發炎和氧化壓力有關,這些生化過程可能導致DNA損傷和癌症發生。然而,這些關聯性仍然存在爭議,還需要進一步的研究來確定其真正的影響。
另外,一項於2004年發表於《營養、代謝和心血管疾病》期刊的研究指出,高GI的飲食模式會增加乳癌的風險。該研究還發現,糖的攝取量越高,發生乳癌的風險就越高。
總體來說,目前的研究支持醣類攝取與癌症風險之間的關聯性,特別是高GI的飲食模式。儘管仍然有一些爭議,但限制醣類的攝取量可以被視為一種潛在的癌症預防策略。
